Popping in color and full of flavor, this dish makes for an appealing meal. It's also great to share with the whole family!
- 2 hard-boiled eggs
- diced 1 tbsp raisins
- 1 4-inch stalk celery
- 2 tbsp mayonnaise
- dash of curry powder
- 2 slices of whole wheat bread, crust removed
- Mix all ingredients thoroughly, except the bread. Divide into two equal parts.
- Press on the bread slices to flatten.
- Take one part of the egg salad and spread it evenly on one bread. Roll and fasten with a toothpick. Repeat this step for the remaining ingredients. Serve with lettuce leaves.
